In one paragraphPascal Doquet Cœur de Terroir Le Mesnil-sur-Oger Grand Cru 2006 is a vintage blanc de blancs made solely from Chardonnay grown in the grand cru village of Le Mesnil-sur-Oger in Champagne's Côte des Blancs. Pascal Doquet is an RM (récoltant-manipulant), a grower who makes champagne from his own grapes; he farms organically and ferments with wild yeasts. On Vivino this vintage averages 4.4 from 144 ratings and the label as a whole 4.4 from 563; Wine-Searcher's aggregate of six critic reviews is 93. Wine-Searcher's world average price is US$128 per 750ml (ex-tax, Sep 2026). Toast, brioche, minerals and honey lead, in a high-acid, medium-bodied wine at 12% alcohol. I noted its nutty maturity, its minerality and its value, and gave it a 4.5.

toastbriochebutterA memory from June, at twenty-one

What I learned today: you can drink champagne with your ears first.

Thursday. When I came in after switching on the sign, Master Seo had a tall flute standing on the counter. He half-filled it from a cloth-wrapped bottle and said that tonight the ears come before the nose. Lean close to the glass and stay still, he said. When the bar went quiet, I heard a very small sound. Bubbles rising and bursting. Thin, and never stopping.

Only then did I bring my nose to it. Toast, brioche, butter. Under them, wet stone. When I held a sip, the acidity stood up straight, and at the end a little caramel and ginger stayed behind. And my whole mouth tasted nutty and toasty — the word that came to me first wasn't the proper one but the dialect one, kkosupda. That word opened an early-summer kitchen.

Twenty-one, a Saturday evening in June. The first hot day of the year. The kitchen window was wide open, and Dad took a cloth-wrapped bottle straight from the fridge and poured two glasses. I took a sip and said without thinking: kkosupda. Dad laughed out loud. What kind of wine word is that, he said. Then he filled my glass once more. I don't know the name of the bottle.

I opened the notebook to that date. The first line is this bottle. A house famous as an excellent RM in Le Mesnil-sur-Oger, he wrote. True to grand cru, it shows the year's "excellent kkosupeun performance" and the minerality of the terroir. A champagne of truly great value. Four and a half stars. The bottle was Pascal Doquet Cœur de Terroir Le Mesnil-sur-Oger. I stuck on the wine-name Post-it. The notebook says kkosupeun. That isn't how Dad talked. It's what I said that day. He probably laughed and wrote my word down just as it was.

I asked Master Seo what RM means. The answer was short.

After closing, I wrote the name on the twenty-third page of the new notebook. At the bottom of the aroma column I wrote kkosupda. What I learned today: you can drink champagne with your ears first. And sometimes Dad's notebook holds my words.

Haru — Thursday evening: 'ears first tonight'. Haru listens for the tiny sound of bubbles bursting in the flute.

What this wine is

Le Mesnil-sur-Oger is a grand cru village in Champagne's Côte des Blancs. Chardonnay grows on chalk here, and several famous blanc de blancs come from the village. Pascal Doquet's family began making wine in the village in the 1930s, with his maternal grandfather. From 1982 the bottles carried the name 'Doquet-Jeanmaire', and Pascal took over the running of it in 1995.

The turning point came in 2003. When his parents retired, the vineyards were divided among the siblings, and that same year Pascal set up a house under his own name. Today he tends about 8 hectares across Le Mesnil, Vertus and Bergères, with vines 37 to 77 years old (according to the British merchant Justerini & Brooks).

The farming is organic. Fermentation uses only wild yeasts; filtration before bottling is light and there is no fining. About a third of production is aged in used oak barrels. He reportedly never picks below 10.5 degrees of potential alcohol — quite ripe by Champagne standards. 'Cœur de Terroir' (heart of the terroir) is the house's vintage cuvée from a single village and a single year.

Master Seo — Asked what RM means, Master Seo answers in two words' worth: own vineyard, own hands.

How I drank it

June 20, 2020, 4.5 stars. I wrote down toast, brioche, butter, minerals, caramel, apricot, oak, stone and ginger.

A house famous as one of the best RMs in Le Mesnil-sur-Oger. True to grand cru, it showed the nutty maturity of the 2006 vintage well, and the minerality of the terroir was clear. Above all, it was a champagne of excellent value.

The same day I gave Nuala Sauvignon Blanc 2019 a 4, and the first sangria I'd ever tried a 3. I've also given 4.5 to Delamotte Brut 'Le Mesnil-sur-Oger' from the same village. My 4.5 is almost exactly Vivino's 4.4. A rare bottle where the community and I looked at the same thing.

Haru — After closing, page twenty-three of the new notebook. At the bottom of the aroma column, Haru writes 'kkosupda'.
