Market note: Charles Dauteuil is a retail-chain label, and each market gets a different cuvée: Sainsbury's in the UK (Vintage Brut), Leclerc in France (Grande Réserve), and other cuvées elsewhere. Vivino lists the Brut (w/2357232), the Premier Cru (w/2414410) and this Grand Cru Blanc de Blancs separately; this bottle has the highest average of the three. The data is thin — 400 ratings and 110 reviews — and Vivino wrongly lists the grapes as 'Pinot Noir, Chardonnay'.

What I learned today: even a three-word record is as long as a page to the person who sat beside it.
Friday, an hour before opening. Master Seo brought a small tree out of the storeroom. Exactly my height. In the ornament box, gold baubles lay in a row. He wound only the string of lights and stepped back: "The baubles are yours." When I stood on tiptoe and hung the last one on the top branch, he held out a flute. "For your trouble."
Fine bubbles. Ripe pear, then honey. Even after I swallowed, a little honey stayed on my lips.
That honey on my lips brought an evening back. I remember a scent I've smelled once, date and all. Late autumn when I was twenty-one, a Wednesday evening with cold rain drumming on the window. On that night of endlessly changing glasses, at one glass of rising bubbles I said, "Honey." Instead of answering, Father pulled the notebook over and wrote something. The pen moved three times and stopped. When I tried to sneak a look at the line, he tapped the back of my hand with the pen tip. I don't know the bottle's name.
After closing, I opened that day's notebook. Where the pen had moved three times, there really were three words: "Pear, honey, great." Four and a half stars, on the high side of that night's glasses. The bottle was Charles d'Auteuil Blanc de Blancs Grand Cru. Master Seo only said, "It's a name one family keeps for the shops." I stuck a wine-name Post-it into the notebook. Maybe, writing those three words, Father borrowed my "honey."
Before switching off the tree lights, I turned one gold bauble a little further to the front. What I learned today: even a three-word record is as long as a page to the person who sat beside it.
What this wine is
The label makes three promises. Blanc de blancs means Chardonnay only; Grand Cru means grapes only from Champagne's 17 Grand Cru villages; Brut means dry. The Chardonnay Grand Crus sit mostly on the Côte des Blancs — Chouilly, Cramant, Avize, Oger, Le Mesnil-sur-Oger. Which village this is, the label does not say, and I could not find out.
Who 'Charles Dauteuil' is turns out to be the more interesting question. There is no official website, and wine retailers repeat the same boilerplate about 'a family domaine with decades of tradition'. Follow the French trademark and company registries and the answer appears. The trademark belongs to GCPR — Groupement de Champagnes de Propriétaires Récoltants — a beverage wholesaler set up in 1998 in Romery, a small village in the Marne Valley, and its managers are Romain Tribaut and Maryse Tribaut. That is the Tribaut of Tribaut-Schloesser, a family that has made Champagne in Romery for four generations. Decanter, reviewing the same brand's Vintage Brut, described it as 'made for Sainsbury's by family grower Champagne Tribaut-Schloesser'. So Charles Dauteuil is a separate brand one grower family runs for retail chains: Sainsbury's in Britain, Leclerc in France and other chains elsewhere each receive different cuvées. Whether the grapes for this Grand Cru Blanc de Blancs come from the Tribauts' own vineyards or are bought in, how long it spends on the lees and what the dosage is — none of that is published. The one thing I can confirm is 12.5% alcohol.
What the world says
No critic has ever scored this bottle. Not Wine Spectator, not Suckling, nobody listed on Vivino. Retail-chain labels do not reach the critics' tasting tables. What remains is the community.
Vivino: 400 ratings, average 3.9. 65% at 4 or above, 32% at 3, thirty people (8%) at 5. 110 reviews. Higher than the same brand's Brut and Premier Cru, but the number of ratings is 0.3% of Veuve Clicquot Yellow Label's. Keywords: green apple, pear and baked apple (26 mentions), brioche and biscuit (15), citrus (12), and honey (7). Acidity 4.1/5, fizziness 4.2, intensity 3.6. The numbers are small enough that this is impression rather than statistics, but the direction is consistent: apple and pear, bread, honey. Exactly my note.

None of the reviews is in Korean, but the sentence structure of several English ones gives away Korean users. The label's distribution map shows through.
How I drank it
November 13, 2019, 4.5 stars. The note is three words: "Pear honey great."
Five of the sixteen bottles I logged that day got 4.5: Almaviva, Veuve Clicquot Yellow Label, Two Hands Samantha's Garden, Alta Vista Serenade, and this one. Among the four sparkling wines it ties with the Veuve Clicquot, with Canti Prosecco at 4 and Ruhlmann crémant rosé at 3 below. Charles Dauteuil never appears in my log again.
My 4.5 is 0.6 above the community's 3.9, and there is no critic score. The community keywords include pear 8 times and honey 7. Because different cuvées ship under this name in different markets, it is hard to verify the same bottle again, and I have no re-tasting planned.

What kind of Champagne is Charles Dauteuil Blanc de Blancs Grand Cru?

It is listed on Wine-Searcher, but with almost no stockists there is no confirmed overseas retail price. As a retail-chain label its price swings widely from seller to seller, and the same name covers a different cuvée in each market.
What food does it go with?
Vivino lists pork, shellfish, salmon and tuna, and mild soft cheese. Being 100% Chardonnay it is light and high in acidity, so it is especially good with hoe (Korean sashimi), oysters, sushi and fried food; one reviewer called it 'a good match with raw seafood'. Serve cold at around 8°C and give it 30 minutes in the glass for the brioche to come up.
