mineralscitruslemonA memory from January, at twenty-two

In the scent column: 'lemon needle, butter once it settles, faint sesame at the very end.' What I learned today: scents, like people, take a little after whoever taught them.

Thursday. Master Seo opened a white, poured just a drop into my glass, swirled it once around and tipped that sip away. Washing the glass with the wine itself, he said. Only then did he pour properly.

The first scent was thin and sharp. Lemon, lime peel, stone after rain. It gathered at the tip of my nose in a single line, like a needle. I set the glass down a moment, lifted it again, and the needle settled; butter and honey rose up. And at the very end, very faintly, the smell of sesame being toasted. Much fainter than the one on page thirty-nine. That faint nuttiness opened the table on the second day of the new year, after the dinner dishes were done.

Twenty-two, the second day of the new year, after the fish plates were cleared. Bowls were turned upside down on the drying rack, and the kitchen still held a little of the grilled-fish smell. Dad opened two white bottles one after the other. The first passed lightly, like lemon water. The second was pointed at first, but in the mouth it settled right down. The toasted-sesame smell from a month before came back to me, and I said it was like that white bottle's younger sibling. Dad laughed without a sound and didn't put his pen down for a long time. I don't know the name of the bottle.

Of the eight lines for that date, two were whites. The first bottle opened got three and a half stars: pleasant enough, he wrote. This one got four and a half. Sharply concentrated aromas, and as it settles on the palate it says, 'I'm Ente.' And that he still couldn't forget the thrill of Coche's Meursault, and couldn't wait for Ente's Meursault. The bottle was Arnaud Ente Bourgogne Chardonnay 2015. I stuck on the wine-name Post-it. Probably Dad brought the bottle from a month before into that line because of what I'd said about a younger sibling.

Minjae took one sip and went quiet. Master Seo, looking at the bottle, added a sentence, and inside it was the story of that door I'd heard a month ago.

After closing, I wrote the bottle's name on page forty-four of the new notebook. In the scent column: 'lemon needle, butter once it settles, faint sesame at the very end.' What I learned today: scents, like people, take a little after whoever taught them.

Haru — Thursday. The glass washed first with a single sip, then filled. When the lemon needle settled, butter rose.

What this wine is

Arnaud Ente was born in 1966. While working at Coche-Dury, the near-legendary Meursault house, he married Marie-Odile Thévenot in 1991, and the following year, 1992, started his own domaine in Meursault (Berry Bros. & Rudd). Much of the land came from his wife's Thévenot family. Today their son Pierre works alongside them and handles the reds (Inside Burgundy).

The domaine is small, about four hectares. At first Ente picked late for full ripeness, but from around 2000 he turned to earlier harvests to keep acidity and minerality, and, as Inside Burgundy puts it, became a byword for early picking. The estate was certified organic in 2014. The Aligoté, the Bourgogne Blanc and part of the regular Meursault are aged in large 600-litre barrels (Berry Bros. & Rudd).

Bourgogne Chardonnay is Burgundy's broadest and most basic label. Yet by Jancis Robinson's account from a pre-bottling tank sample, the 2015 came from two vineyards in Puligny and one in Meursault. Coche-Dury's Meursault, from the house where Ente once worked, I had drunk a month earlier.

Minjae — One sip and Minjae goes quiet, holding out his empty glass. Master Seo, one sentence: 'The man who made it worked inside that door.'

What the world says

The four critic reviews on Wine-Searcher aggregate to 89. Jancis Robinson, tasting a tank sample before bottling, called it lean and lively with some matchstick, and more like a village wine than a Bourgogne.

On Vivino the 2015 averages 4.4 from 128 ratings: 29 fives, 87 fours and 12 threes. The label as a whole averages 4.2 from about 890, and among the 2009–2019 vintages the 2015 sits at the top alongside 2010, 2013 and 2018. The suggested drinking window is 2018–2025.

"By far one of the best Burgundy Chard I've tried. Minerals, citrus, complex nose. Well structured palate with stone, minerals, bit oak and looong finish." — Vivino review, Nov 2020, 4.5 stars

Structure shows acidity 3.5, intensity 3.7 and sweetness 1.6. Citrus (38 mentions), lemon (29) and lime lead the keywords, followed by minerals (24), stone, honey and flint, and oak (25) and butter (21).

The world average is US$352 / 750ml (Wine-Searcher, ex-tax, Sep 2026) — a high figure for the most basic label.

How I drank it

January 2, 2021, 4.5 stars. Of the eight bottles I logged that day, two were white. I gave Leflaive's Mâcon-Verzé 3.5 first, then this one 4.5. The only higher score that day was Egly-Ouriet's Blanc de Noirs at 5.

The aromas were sharply concentrated, and on the palate it settled right down. I wrote that in that moment it seemed to say 'I'm Ente.' A month earlier, on December 1, 2020, I'd given Coche-Dury's Meursault 2013 five stars. I wrote that I still couldn't forget that thrill, which was why I was looking forward to Ente's Meursault. I didn't know it then, but Arnaud Ente is someone who worked at Coche-Dury.

The community averages 4.4; I gave 4.5. Well above the critics' 89. I'd thought of a premier cru Meursault while drinking the most basic label, so the score went to that recollection, not to the appellation.
