Red fruitSpiceEarth & leatherA memory from September, at twenty-five

In the scent column: 'raspberry, cherry, pomegranate, white pepper, clove — rounder after the scorched rice.' At the end of the line I added one more, in Dad's way of speaking: now I'm curious about the Jura too.

Saturday. As I sat down, Master Seo set a small dish beside my glass: a few pieces of golden, crisp scorched rice. 'Wine alone first. Then chew a piece of this, and drink again.'

The wine was clear and pale red. Raspberry, cherry, pomegranate seeds, white pepper, a little clove at the end. The first sip was tart and light. Fine — just about that. But after chewing the scorched rice and drinking again, the same glass turned round. The fruit rose up sweet, and the acidity leaned back against the toasty, nutty taste. That toasty smell opened the kitchen on a September night when I was twenty-five.

Twenty-five, a Friday night in the fourth week of September. Dad came home close to midnight. Without taking off his coat he opened the rice cooker and scraped the rice stuck to the bottom with the paddle. Would I make some sungnyung, he asked — the tea you boil from scorched rice. While I poured water into a pot and dropped in the rice, Dad sat at the table. Tonight a red wine, paired with a grain dish, had turned into someone else, he said. The sommelier there had recommended it, and he'd been startled. He took a spoonful of the sungnyung and laughed: this was the taste. I wasn't there, and I never saw the bottle. I don't know its name. I only remember the steam rising from the pot.

In the notebook, that day had four lines. The second was long. He'd drunk it with conger eel and a grain dish like sungnyung. On its own it had seemed fairly good, but 'meeting the grain, it had turned into a great wine.' Four and a half stars. The bottle was Domaine de la Pinte Trousseau Arbois. I stuck on the wine-name Post-it. The fourth line was the name from page fifty-two, Far Niente. The night I boiled sungnyung and the morning his butter knife stopped were the two ends of one night. Probably Dad wanted sungnyung because he wanted to check once more, at home, why the taste had changed.

When I'd finished the glass I asked where this wine came from. Master Seo answered briefly, and Minjae, beside me, added something from the supermarket.

After closing, page fifty-three of the new notebook. In the scent column: 'raspberry, cherry, pomegranate, white pepper, clove — rounder after the scorched rice.' At the end of the line I added one more, in Dad's way of speaking: now I'm curious about the Jura too.

Haru — Saturday. A dish of scorched rice beside the glass. 'Wine alone first. Then chew a piece, and again.'

What this wine is

The Jura is a small region on the mountain slopes east of Burgundy, running toward the Swiss border. Its main town is Arbois. When France legally created its first six AOCs on 15 May 1936, Arbois came first on the list, alphabetically (Wine with Seth; wein.plus calls it the first area classified). It is also where Louis Pasteur grew up and did his fermentation research. The vineyard Pasteur bought in 1874 still belongs to the French Academy of Sciences (Wine with Seth).

Domaine de la Pinte was founded in 1953 by Roger Martin on a piece of land in Arbois called 'La Pinte à la Capitaine'. His son Pierre Martin expanded it to 34 hectares across Arbois and Pupillin. It was certified organic in 1999 and biodynamic in 2009 (iDealwine). Savagnin makes up half of those 34 hectares; Trousseau covers just two.

Trousseau is one of the Jura's three red grapes. Compared with its neighbour Poulsard it gives deeper colour, riper fruit and firmer structure, and it ripens best on the warm gravelly soils near the town of Arbois (Wine with Seth).

How I drank it

September 22, 2023, 4.5 stars. I logged four lines that day: Paques et Fils Origine Brut Premier Cru 2014 (4.5), this one, Domaine du Vieux Télégraphe Télégramme Châteauneuf-du-Pape 2020 (3.5, paired with Ibérico pork), and Far Niente Chardonnay 2019 (4).

I drank this with a dish of conger eel and grains that tasted like sungnyung, the Korean scorched-rice tea. The sommelier recommended it, saying Jura wines go well with grains. On its own I thought it was fairly good; with the grain it had turned into a great wine. It matched so well that I was startled, I wrote. Now I was curious about the Jura too — pairing really is fun.

My 4.5 is 0.6 above the community's 3.9. The difference came from the plate, not the bottle. My 'fairly good' was probably close to the community's 3.9; the other 0.6 was the grain's share. Before this entry, there was no Jura wine in my notes.

Haru — Page fifty-three. 'Rounder after the scorched rice.' And one line in Dad's voice: now I'm curious about the Jura too.
