"Take this to your Master." What I learned today: sometimes it isn't the first glass that sets the temperature of an evening, but the next one.

Sundays the bar is closed. Today I made kimchi at Mom's. From the morning, salted cabbage was piled like a mountain in the living room, and Mom mixed the filling the way she kneads dough. In rubber gloves, I tucked filling between the cabbage leaves. Mom said, "Go that gently and we'll be eating it next year."

At lunch Mom boiled pork. A spoonful of doenjang, a few jujubes. When she lifted the lid, steam burst up. The sweet red smell of jujube, and under it the aged smell of doenjang. That aged smell was just like old leather.

That leather brought an evening back. Early February when I was twenty-one, a Thursday evening with a strong wind. After the first glass with its quiet bubbles, Father stood a second bottle on the table, wrapped in cloth. Cherry and raspberry rose from the red glass, and leather stayed at the end. Outside it was still loud, but from that glass on the kitchen grew a little warmer. Father's shoulders came down a little too. I don't know the bottle's name.

In the evening I opened the notebook: "cherry leather raspberries," and then, "a good-value CDP" (translated by Haru). I didn't know CDP, so I texted Master Seo. The answer was short: "Châteauneuf-du-Pape. The Pope's new castle." I stuck a wine-name Post-it into the notebook. The bottle that warmed that quiet night came from a pope's castle.

All six kimchi tubs were full. Mom packed the smallest one separately. "Take this to your Master." What I learned today: sometimes it isn't the first glass that sets the temperature of an evening, but the next one.

During the so-called Avignon Papacy that began in 1309, when Pope Clement V moved the papal seat from Rome to Avignon, his successor Pope John XXII built a summer residence nearby and planted vineyards around it. How I drank it

6 February 2020, 3.5 stars. The note is a single line: "Cherry, leather, raspberries — good value CDP." Rather than stretch it into an interpretation, here are the facts: that same evening Daniel also logged a Deutz Classic Brut, which got a 3 — with the comment that the gathering "started out flat, so I drank it without much excitement." By comparison, this Charvin Châteauneuf-du-Pape was the standout of the evening.
